It's the length of time. Really 700 Years Old can cover any long length of time, while Time Abyss is specifically for really long lengths of time, on the order of tens to hundreds of thousands of years at a minimum.
They are two different tropes. Really 700 Years Old is when a character is Older Than They Look with a supernatural explanation (alien, magic, etc), thus others assume they are a relative age when they are not. Time Abyss is a character who has been around for so long things start to blur together because they have experienced several civilizations rise and fall.
- Really 700 Years Old: A character looks 16 but is actually 105 because of a curse.
- Time Abyss: An immortal character mentions hanging out in Rome when it was just a few tents and then brings up the Napoleonic Wars in the next sentence.

Do you not know that in the service one must always choose the lesser of two weevils!A Time Abyss's age isn't really a number, it's just "no, older than that". Older than anything else they can be meaningfully compared to, and they themselves have likely forgotten their origins.
