No, but I think the OP is a pretty good representation—some entity that can be witness to anything just by sheer force of will.
By comparison, what do people think of the current image on The Omnipotent?

Seeing everything doesn't mean knowing everything. The only connotation I see in OP is Big Brother Is Watching.

Knowledge and sight have been intertwined since Odin at the latest. "Sight" can be short-hand for empirical evidence or data collection. I don't see this criticism as valid against this image.
That said, this image doesn't seem to illustrate even an all-seeing eye. It looks like a living cloud and I don't get what the ship is supposed to do for the image other than just "be there." In other words, I don't think it works for all-knowing or all-seeing, and I also don't see it as a kind of "visual pun" sort of thing or "metaphor." It's lost on me.

The boat represents the unsteadily floating mankind, or some philosophical profoundness. Usually, having humans in a picture is a way of showing that it's a snapshot of a living world, rather than an imagined landscape.

I'm still not seeing this as illustrating the "all" part. The imagery seems to be incoherent or randomly chosen. Birds? Okay, birds, there's a connection with birds and knowledge. Seagulls? Why are they seagulls tho. Lighthouse? Okay, there's another connection with humanity and the modern day. UFO? But why tho. It don't make no sense
If we're going for a visual metaphor thing, which I could very well get behind, I think the symbolism needs to be clear. Over on The Omnipotent, for example, there's a pair of hands creating or holding a star. If we could find an eye overlooking a galaxy or something that'd be fine, imo. But that hasn't been suggested yet.

You mention all those details, but then ask yourself why they should be there. It's the opposite: They're there because "everything" doesn't exclude them. I think that's something that makes the image better, not worse.
Check out my fanfiction!Upon inspection, the current seems to be an illustration of Eye of Providence, which is a real-life symbol of Omniscience. If we are going to go that way I'd prefer to use the actual symbol rather than photoshopped image that can be interpreted ambiguously.
