What you are describing is Pygmalion Plot. Whether it is also incest by the literal definition would depend on whether this creation is genetically related as well, but generally you'd use the more applicable trope.

Good evening. Can I use Parental Incest if the character becomes a couple with the girl he created himself? This is not a real incest, since the girl is just the product of his thought or work, but I do not know which trope can still be applied.
