I love Mario to bits so I'm still hyped, but I'd welcome some more of Nintendo's many iconic franchises being represented.

Remember, we're due for Nintendo worlds in Universal Studios Hollywood and in the upcoming Universal's Epic Universe park in Orlando...which is coming much later because of that goshdarn pandemic.
There's a reason why the US is singled out as the epicenter of the pandemic. Every other country was able to clamp down on the pandemic to a level where life can go semi-normal because of competent government policies and leaderships. And you can see it with theme parks and movie theaters.
Man, that's so tempting, but I rather play it safe than sorry.

The Japan park has a new reopening date of March 18th.

Tried getting into Super Nintendo World, but the amount of people allowed into the venue controlled. You can either purchase the Universal Studio Passes which must be bought ahead of time before visting (in addition to the park ticket, but at least it's guaranteed entry), free timed passes (which quickly ran out before 11:30am, at least from my experience), or lottery raffle passes, which are easily the worst since you've got no control over what time is chosen and there is no guarantee of entry.
I kinda get why - between COVID's social distancing policies and how insanely popular that section of the park is, they're gonna draw in huge crowds and need to safely manage things, but it was a still a real bummer.
The park was absolutely pushing Super Mario merchandise: several stores were filled with nothing but Mario memorabilia, and even other storefronts which were focused upon other brands would have the occasional stray bit of Mario merch in their wares. A bit of an oddity I noticed about the merch: several pieces had the phrase "Whose Cap?" or "Whose shirt?", despite clearly either belong to Mario, Luigi, Peach, Toad, etc. I'm thinking it's a meme or something, but I've certainly never heard it in my circles of the internet. Any ideas on what the reference may be?

The Owl House and Coyote Vs Acme are my Roman Empire.Kirby or F-Zero would be the logical choices. Kirby since it's (mostly) family-friendly and his stuff is easily marketable, and F-Zero since it would make for an amazing high-speed roller coaster ride. Or maybe a Yoshi-World; wouldn't take too much additional effort to tie it into the rest of the Mario content that already exists.
I don't think we'll ever see a section devoted to Metroid though, as much as I would love to see one. The art design unfortunately works against it, because aside form Samus and some of her rogues gallery the setting is pretty generic space-sci fi, which might draw criticism of the park creators being lazy.

My picks would be Splatoon or Zelda.

Zelda is likely, but that's looks more like it's replacing Islands of Adventure.

The Owl House and Coyote Vs Acme are my Roman Empire.I had this really dumb idea for a Splatoon theme park where, in a convoluted attempt to justify the park's existence in Splatoon canon, the lore of the park is that it's an experimental archaeological exhibit for Inklings where all the humans are simulated.
Hmm… I wouldn’t have gone that in depth… or horrifying… part of me feels like “you’re in Inkopolis/Splatsville, go have fun” would have been enough. Maybe some water themed rides justified by “you’re water proof, the inklings aren’t”. But that isn’t entirely a bad idea… Though maybe add a time travel element to tone down the existential horror.

The Owl House and Coyote Vs Acme are my Roman Empire.IIRC it was only one specific Island in Islands of Adventure that the rumored Zelda area would be replacing (but I forget which one it was; Lost Continent, I think?). Islands of Adventure itself isn't going anywhere.
But yeah, Epic Universe looks...well, epic. Makes me wish I could go over to take in Universal Orlando right now. 😅

(Japanese) Mario Cafe & Store, a themed combination restaurant and store, will open at Universal Studios Japan on October 16; Super Nintendo World is planned to be open in early 2021.
