Let's start with me :
First, I have the usuals — the Unofficial Patches to fix most bugs, and SkyUI which vastly improves the interface and provides a configuration menu for other mods.
Skyrim Unbound is an alternate start mod (unfortunately not available on Skyrim Nexus). It lets you chose a birthsign, some gear, some spells, and a starting location. You can also chose not to be the Dragonborn, and even not to have dragons at all, while leaving the rest of the game fully functional.
Frostfall is a cold weather survival mod. Getting caught in a snowstorm, falling into icy water : now all this can kill you. I use it in conjonction with two capes and cloaks mods : Cloaks of Skyrim and Winter is Coming.
Diseased : I haven't tested this mod yet, but it promises to make the various diseases you can catch while wandering Skyrim a real danger, progressing in severity and eventually killing you if unattended...
Realistic Carry Weight does Exactly What It Says on the Tin : it significantly decreases the base carrying capacity, based on the race. I use it with More Realistic Carrying, which decreases the weight of worn equipment, and Bandolier - Bags and Pouches which adds a number of items worn over the armor to increase carrying capacity.
Better Fast Travel adds a great number of carriages and boats locations and destinations, as well as increasing their prices on longer journeys. It also has an option to disable fast travel.
Inconsequential NPCs adds a little under 100 NPCs with unique dialogue in the game. It's basically a Interesting NPCs lite.
Immersive armors is massive compilation of well-crafted, lore-friendly (mostly) armors, and shields of all size, shape and color.
Immersive weapons is the same as above, only for weapons. Unfortunately, it doesn't have a MCM to disable the most outlandish designs like Immersive Armors does.
Heavy Armory is another weapon collection. It has a lot of new weapon types (including polearms), tiered by material like in the vanilla game.
Khajiit Speak replaces the player's line to reproduce the Khajiit unique speech patterns.
I also use Race Menu, A Quality World Map, Randomly-Generated Generic Townsfolk, Realistic Movement Speed, Killing Traps, Dynamic Timescale and Player Headtracking.

Worldbuilding is fun, writing is a chore
We already have a Skyrim thread, but here's a place to talk about the modding aspect of this game, which honestly is half the fun.
So, what mods do you use ? What do you recommend ? What do you consider and want advice about ?
A few useful links : Skyrim Recommended Mods at TV Tropes, the Skyrim Nexus, and Skyrim GEMS.
