I use Firefox and HTML5 and, yes, I can watch in 480p(plus 1080p). I was pretty sure that wasn't always the case, though. Until sometime ago it was exactly as you described and I stuck to Flash for a similar reason (albeit because I didn't want a downgrade to 720p). But now it is working fine. You should try it out again. Update your Firefox if you haven't already and test it.

I did check the HTML 5 player today, I believe, and found it to be just as I described above.
It's possible that I have an old version of Firefox—Ubuntu seems to have a tendency to let programs fall behind in its repositories for a given version of Ubuntu. I'd have to look how one goes about manually installing it in order to get a newer version than the one that I have.
That said, going to Mozilla's Firefox website results in a message indicating that my version of Firefox is up to date...
If I can get the HTML 5 player working to my satisfaction on my end, I'll likely be happy to switch over.
I might do further research tomorrow: if I'm encountering this issue, then it's likely that others have, too, and it may be that the solution is already known.

Ah, my mistake—I thought that you were just linking optimusjamie to a page that would provide access to the player itself, not realising that it was also the information page that you had mentioned!
Hmm... Looking at that, it seems that the only one available in my version is "HTML Video Element"—all the others are unavailable. A little more investigation seems to indicate that the relevant elements are available in Firefox, but are disabled by default under Linux. From what I've read, I should be able to activate the relevant options—but I'm hesitant to do so if they're not considered ready. :/
Other than that, I stand corrected!

My Games & WritingMy apologies that this is a double-post, but I thought that I'd post a quick update to the above: It seems that, due to licensing issues, Firefox by default leaves certain components disabled under Linux that are enabled under Windows and Mac, hence the difference in functionality.
However, one can simply enable these components via the "about:config" page; I believe that under Ubuntu they do rely on the "restricted extras" package, but I have that installed anyway. Having enabled the relevant components, I seem to now have the appropriate list of resolutions, and have switched from the Flash player to the HTML 5 one. ^_^

It caused a few problems during the transition(my video restarted part ways to change into the new layout, then it restarted again to change back), but I think it is stable now.

I'm not really sure what the new player is supposed to look like since I've been using one of the test players. Though, the new player could be the same one.
YouTube just launched a sub-site specifically devoted to gaming.
It looks...weird. I'm not sure I like it.

I highly doubt gaming youtube will be jumping ship en masse to the new platform. Twitch already has an established base, despite issues with the service.
I mean, it's literally the same site, isn't it? Can't this just be their "Gaming" section, like all the videos classified under that category show up there?

I suppose that it's possible that the problem lies on Firefox's side, or even Ubuntu's (that being the operating system that I'm using)—but that seems somewhat odd. Why—and how—would either be causing the HTML 5 player to simply lack items in its resolution menu? o_0
It's not that I can't watch videos at all in the HTML 5 player, or that resolution options are greyed out or don't load the proper resolution: the player runs as expected, and the menu pops up as expected, but said menu simply contains only three (I think that it was) items: "auto", "360p", and "720p HD".
