A man who is constantly concerned with working out at the gym, not to stay healthy, but as an attempt to hold onto his youthful looks for as long as possible. It's not unusual for him to be Hollywood Pudgy, thinking his body is never quite good enough as he dives headfirst into the Spear Counterpart for anorexia. He also uses the Gym as a possible meeting place for potential mates. In many cases, he shows an interest in sports and athletics as well, especially when younger. In this instance, he is generally just portrayed as the gay version of a Jock. In many cases, however, he doesn't know the first thing about sports and is only exercising for the superficial benefits.

I'm not sure I've heard it specifically about either gender, but just a person who either seems addicted to the gym, or addicted to getting the benefits of gym training. Or someone who just loves gym training.
I suppose the main point is just "excessive gym training."

Ah, I thought it was about a vain type who always goes to the gym. the lady would wear full makeup even though they are exercising.
I'm not saying my definition is necessarily right. Just the way I've understood the term previous to encountering it here.

I find the description of Gym Bunny to be rather insensitive in its tone and laced with femmephobia and gender enforcement. Since we're trying to make this wiki a more welcoming place for different groups of people by removing creepiness and pedoshit, I think language that subtly devalues people who differ from social norms should not be tolerated either, so I think the description could use a rewrite so it doesn't imply that it's somehow wrong to be a man who wants to maintain his appearance.
See Manly Gay and Macho Camp. Compare/contrast with Lesbian Jock, who tends to have a more genuine interest in athletics but might also use it to pick up women. Compare also the Lipstick Lesbian; both the Gym Bunny and Lipstick Lesbian are used as opposite sex fanservice in very similar ways.
