All of the pixar commentaries. Insightful, funny, and interesting.
Also, on Jonah: A Veggietales Movie, there was an audio commentary in character by 2 of the main characters, Larry and Mr. Lunt. It is, in all honest, one of the funniest things I have ever seen. It's just an hour and a half of hilarity.

Commentaries with the whole 'now-grown-up child stars' thing going on are always a pleasure for me, like The Goonies and the Willy Wonka movie.

These days, immediately after watching a DVD, the first thing I do is go to the extras menu and see if there's a commentary track. Whether they're insightful, funny or all over the place, I love them!
My love started with the Hellsing commentaries, featuring the director, Taliesin Jaffe, and some of the voice actors. They're full of interesting discussions, the possiblity of Walter in a dress and hilarious discussions about Taliesin's... 'ukelele'. Kind of sucks that Seras' VA hasn't done one yet, but I guess we can blame Geneon for dying on us and thus delaying the release of new episodes for years.
