(Before you go leaping down to the comments to recommend George R.R Martin bear in mind I'm sure it's dandy but I ain't after that.) What I'm looking for is a book to cover most subjects such as; chemistry, animal behavior, mythology (including getting into certain areas general history of their mythology), electronics. I'm looking to learn a great deal about these subjects and recommendation from experienced readers would be very helpful.

Are you asking for fiction that includes those topics, or reference books on them?

Finding one reference that includes all of them pretty much means you're looking for an encyclopedia.

If you're looking for fiction, there's a thread here that is likely to get you a better response.

Ursula Le Guin - anything by her, really (maybe not Earthsea). Seems to be what you're after. Science, anthropology, politics, assumes intelligence on the readers' behalf - and plot!

James Hogan's "Giants" series as well. Starting with Inherit The Stars. It's One Big Lie science fiction — basically hard, but one big lie — FTL is possible, in this case. Covers genetics and xenobiology, astrophysics, politics and office politics, psychology... all sorts of things.

Mythology is a hugely varied body of stories and religions, so you may want to be more specific with what kind of civilizations you're looking at. If you're interested in comparative mythology, The Hero with a Thousand Faces and A History of the Devil are good and accessible introductory pieces. When They Severed Earth from Sky is an interesting look into how history is turned into myth in preliterate societies. Take everything you read in the field with a grain of salt, though. Nearly every ancient myth had multiple versions with different underlying meanings, so be wary of authors trying to extrapolate facts about societies from their myths alone.
