A fan of anime, music, and movies.Wasn't there a scene in the Legends EU where Anakin's Force Ghost appears to Leia and she basically tells him to scram because of all the crimes he's committed?

Perhaps might be included, though she eventually forgave him judging by the name of her last son.
You know, I know it takes away from the uniqueness of the Executor but does anyone else feel a bit disappointed that apparently only one other SSD was built in the new canon compared to the old EU?

The things weren't on the scale of a Death Star, but they were still a resource drain. It's like First Rate ships vs. Third Rates. First Rates are huge, ponderous, smashing bruisers, but they fuck up a country's economy. For the price of one First Rate, you can build three Third Rates that are the perfect balance of strength, speed, and cost.
Why build one super ship when the same cost can get you a reliable battlegroup of lesser ships that can cover more ground and attack more enemies at once?
And yet the Empire can have thousands of ships each fully capable of annihilating all life on a planet on its own and that doesn't screw up the economy?
Probably not, no. That's part of the reason why the Empire fell, isn't it? They had huge, resource-draining doomsday machines like the Death Star, and smaller resource-draining doomsday-machines like the Executor. It's doomsday machines all the way down!
The Empire covered most of the galaxy. With that many resources, you could have a fleet that big. Hell, keep Earth populated like it is, and then populate the other worlds in our star system to the balance point where their resources aren't strained but there's almost no waste, and you could probably field an army of over a billion people, counting the bean counters and paper loggers.
Grab a few others, and you get a bigger army. It really isn't unrealistic for an empire of Star Wars size to be able to field the military they have.
Then why is it such an issue to make something like a Super Star Destroyer?
In defiance of the superweapon-of-the-week stories of the old EU, it would really make more sense for the Emperor to commission precisely two SSD's - for him and for Vader - in preparation for the Death Star's completion. A star dreadnought is like the One Ring - a single supercruiser to dominate the rest of the fleet. A few regular SD's are strong enough to patrol any system; larger ships are only needed to keep the Empire's own officers in line, and so would naturally be assigned only to Vader, and perhaps Tarkin.
Part of it is: what's more practical for hunting Rebels? I think Journeyman already mentioned the difference between First-Rate ships and Third-Rate Ships. You can cover more ground with two or three S Ds as opposed to a single SSD, and Star Destroyers are already more than a match for the ragtag rebels.
As was said, for practical purposes 2 or 3 ships that can stand up to the enemy are much better than 1 overkill vessel that can't cover as much distance.
Plus security. Do you really think a smart Emperor wants to hand over ships on par with his own to potentially disloyal vassals?
Resources are still an issue, not in terms of amount but in terms of allocation. At it's height NASA had over 4% of the entire US budget to work with, and with that did amazing things but the lack of dividends lead to budget cuts in the years following the moon landing. The Empire have more things to deal with than just building Star Destroyers and staffing them. Time is also a resource, they can only build a Death Star so quickly, especially with Rebel guerrilla strikes heightening security.
Given how an entire fleet of Acclamator-class cruisers, along with millions of clones, could somehow be hidden within the Republic's usual budget, I'd say the Death Star is the only candidate for presenting an economic burden enough to be a concern at all. Either that, or the galactic economy and production capability suffered severely under the Clone Wars.
Lost Stars did actually imply that the construction of the Second Death Star was straining the Empire's resources. The protagonists's homeworld which initially benefited from Imperial occupation, became a smog-choked barely recognizeable shell of it's former self by the time of the protagonists's final visit just before the events of Rot J because of how much the Empire had upped production.
It's being reported that Gugu Mbaha Raw has been cast as one of the new leads in Episode VIII.
The only thing I know her from is from Doctor Who, but yay!! More black actors in Star Wars is awesome.
