You know, I've always wondered what'd be a good way to classify games like Tekken, Soul Calibur, DOA, or Bloody Roar. Considering 2D fighters either tend to be Traditional, Anime, or Platform Fighters. And while there are Isometric and Anime Arena Fighters in terms of the 3D realm, regular 3D fighters just seem descriptionless in their traditionality. It would be a bit redundant to call them "Traditional Fighters" like their 2D counterparts, so I was thinking...
Side-Steppers? Ring Fighters? Zaxis Fighters?
Gavan, Let's get jiggy!In my experience, traditional arcade fighting games with Z axis stuff is just called 3D fighters and the ilk of Power Stone and Kill La Kill IF are just simply classified as arena fighters, since that's enough of a way to distinguish those types of games anyway.

Likewise, when I was growing up 2.5D - as far as I experienced the term - was mostly used for games that operated in a 2D plane, but allowed the player to sidestep or otherwise "shift" the 2D plane while never actually leaving it.
So, yeah, the first time I heard the phrase 2.5D was in reference to Street Fighter EX, and then further games like Soulcalibur, and Tekken - whereas I largely heard 3D used for games that had complete 8-Way movement, or arena fighters.
I have heard people refer to it strictly as an artstyle thing, but only recently.

The first time I ever heard the term "2.5D" was in reference to Kirby Triple Deluxe, talking about the foreground and background planes Kirby could move to and interact with. That was just in reference to the gameplay, Triple Deluxe wasn't the first 3D animated Kirby game.
