I have a character who specializes in Arabic wrestling. My question is how to make this realistic in combat- i.e. how does someone who wrestles *actually* fight, as opposed to how the WWE fight? I've no idea where to start, but the fighting style is important to the character's identity.

I would suggest looking up MMA fighters who use wrestling as their primary fighting style, and watching videos of their fights. I'm not a big follower of MMA, so I can't provide you with many names to go on, but Randy Couture and Kevin Randleman come to mind.

If you're looking for how wrestlers compete with each other, I'd try looking up videos of catch wrestling or Greco-Roman wrestling.

I have no idea what Arabic wrestling would be. There are several other Middle Eastern wrestling forms. Most famously, I guess, Turkish Oil Wrestling, there's also another form of Turkish folk wrestling and apparently lots of Iranian regional forms. You can find websites and Youtube videos pretty easily online.
