"Shrek becomes stereotypically handsome, but is still, in his essence, the same. The animators kept his facial proportions 'Shrek-ish', but with the hair and square brow he inherited a head worthy of Superman and an unexpectedly 'jock-like' body. The nose was reduced, but overall, the proportions between the higher and lower parts of the face were deliberately kept intact. The magic did change his form dramatically, but look in those eyes, and you can still see Shrek. His button nose and jutting jaw are less pronounced, but still subtly there."
Shrek: The Art Of The Quest on the Human Shrek from Shrek 2

"He's a shapeshifter, but not a very good one. He always looks like himself."
Astrid, on the Pooka, Hilda, "The Train to Tofoten"
