It turns out the reason for this is that the Authority of Gluttony can only 'eat' one person's memory and existence once, but due to the immense CharacterDevelopment Subaru's gone through since being transported to Lugunica, erasing his memories and effectively 'resetting' him to a blank slate would allow Louis to create a 'new' Subaru, with a different existence she could eat, over and over, and over again, until she finds her perfect life. The only catch is that the 'new' Subaru has to consider himself a separate identity from the 'Natsuki Subaru' that Emilia and the others talk about, which Louis almost pushes the 'new' Subaru into doing before the spirit of Rem appears to pull him back from the brink. He manages to get all his memories back by the end, though.]]
