While the exact reason she stole the scythe is unknown, it's suggested that she thought Belle would be more than capable of defeating her without it despite having no magic of her own while Bonnie was already quite powerful. It's also only Belle and the Knights that she's really a threat towards - she doesn't try to fight anyone else.

Part of the reason she kidnapped Clyde was to help Belle regain the motivation she'd lost, and it's implied that Bonnie sprayed graffiti on Clyde's armor (twice, even) as revenge for him breaking up with Belle. She's also shown to be friendly towards children.

When she returns, she calls Vivian out on knowing all along where the portal went to.
