It's obviously that despite his sinister appareance it wasn't evil like the Queen and Snow White certainly would treat him better than its previous owner.

* In addition, Rapunzel is Snow White's great-granddaughter. The Prince was the heir to the throne of Corona, and Snow White became the next queen. Two generations later, her granddaughter-in-law, the new queen of Corona, fell ill while pregnant, and the king of Corona found the Evil Queen's grimoire in a desperate bid to save her. This is how he found out about the sundrop flower and was able to find it to save her. And yes, when Gothel kidnapped the baby Rapunzel to use her magic hair to stay eternally young, she knew that Snow White was her ancestor. She took pleasure in knowing that the descendent of her hated rival had become her slave. A petty revenge, for a petty woman.

Now, think about this. Many vampire lore have it that you don't completely turn until the first time you feed. Sure, she doesn't like her, but how would you feel if you were forced to be the guardian for a child that might turn bloodsucker? Funny how her step mother doesn't fully turn on her until there was a Prince suddenly hanging on her who seemed awfully attached for having just met the girl. And suddenly, Snow White is the Fairest in the land. Maybe, the Step mother wasn't asking out of pure vanity but also as a check to see if her Step daughter had turned. Awful suspicious from the Queens POV. Now, does she hire an assassin or one of her ever so loyal soldiers to kill the girl? No, she hires a "Huntsman", odd title. And she specifically orders him to "bring back and show me her heart", something that would likely be a good way to kill a vampire.

When we saw Snow White pray to God this implies she was either Christian or Catholic. It makes sense as in those days royal families were religious and took God very seriously. It is also foreshadowing as she is reunited with her Prince and is taken to his castle in the clouds which is peach in colour implying not only did God grant her wishes but she also died and met her prince in the afterlife.

Those may not have been canon. It's not unusual for Disney characters who were killed off in a movie to still show up in spin-off material, like the Queen appearing in House of Mouse.

** The main problem with this theory is that the Queen explicitly chose the "sleeping death", which can be broken by true love's kiss, and contemplated that Snow White wouldn't wake up from it because the dwarfs would, as she assumed, bury her "alive". The Prince had already been charmed by Snow White, even if he had only met her briefly, so his kiss was easily one of true love. As for the castle, it did have many towers and was on a tall cliff and surrounded by clouds, but wasn't exactly floating in the sky.
