** By its lore, Chimairamon is an organic chimera to contrast Mugendramon being a mechanical one. That's why it doesn't take the MetalGreymon parts that contain machine parts. As far as why Ken didn't try to add them anyway, he's being influenced by Milleniummon's Dark Spore, and Milleniummon is a fusion of a Chimeramon and Mugendramon. It's likely that he's subconsciously recreating Chimairamon from information given by the Spore and thus wouldn't be adding any obvious parts that it's not already supposed to have.

** It's covered in supplementary drama CDs that random Digital Gates eventually started to open and close sporadically in the time between Adventure and 02, so they could sometimes talk to and visit the Digimon. As for the whole "closed forever" thing, that wasn't really the case in the original translation. The concern was that if they tried to stay in the Digital World after the gates closed, the Digital World might misidentify them as anomalies and overwrite them in the process of trying to fix itself. Once the Digital World finished repairing itself and the Gates came back, there was no more danger in travelling there - they just couldn't control when it would happen until the D3s came along.

** Unimon ambushed her when she was already exhausted fleeing from the Dark Rings and got a direct hit in. Then, he didn't "slightly press on" her tail ring; he fully tried to crush her with his hooves and only got the Ring because she rolled away in time. Even a normal horse could kill a person landing on them with that much force, so it's not surprising the Ring came off under the pressure. She "didn't attack it" because there was no point at which she had an opening to do so until she was already injured and her Ring stolen from her.
