This quote about one of Parcasious' fanfic (specifically Holy Man of the Creek) perfectly encapsulates what I find wrong with them. The Character Shilling turning Shirou Emiya, an underdog in his original work, into an Invincible Hero quickly tires. If you have read one Parcasious fic, you have read them all: Shirou ends up somewhere new (an Alternate Universe or the past), and quickly becomes the Universe's Most Important Character, with New Powers as the Plot Demands that he shouldn't have and very frequently trivializes conflict to the point there are no stakes. And most of the cast are sidelined while The Main Characters Do Everything, reduced to cheerleaders for Shirou.
The only thing I would call Parcasious' fics decent is that the prose is not completely horrible. In terms of story, it is usually the same Strictly Formula, making for dull worlds.
If that's what you are looking for, the equivalent of cheap fast food as a guilty pleasure, go for it. But don't forget that fast food can lead to indigestion and regrets once it's done and over with, and there is always better food to try.
FanficRecs Wouldn't recommend unless looking for guilty pleasure
"I miss back when Shirou was just simply God"
