I can't speak for him, but the anime's art and coloring are more consistent. On the other hand, some of redmon's pictures are badly resized and are full of artifacts.
Hopefully JoJoveller brings out some nice, (canonically) colored Araki artwork for most everyone.

The wild variance in coloring for the manga covers is a feature, not a bug.

I realize, but they have actual set hair colors and I feel like we should reflect it with our images, or else people are going to think Dio has red hair.

Who is to say that Dio doesn't have red hair within the manga continuity?
The picture of Jonathan Joestar is actually Joseph's.
