If I were to take a wild guess, I'd say it would stick out on a sushi platter, ruining the aesthetic cohesion of the dish. Presentation is very important to culinary professional.

Note that it is not that much of a staple in Japan itself, I believe. Like, were I live (and I believe the US?) salmon sushi is basically the default, what everyone will ask if they aren't sure what else they might want. But every Japanese person I know say they don't like it that much and that back home it is not that common.
