Has it ever been stated that reiatsu-sensing can also read another person's mood, or thoughts? And has this ever been demonstrated on normal, non-spiritually-aware humans?
Well- empathy is a thing. I can't really think of any example character- spiritual aware of otherwise- doing anything more than that. Closest would be that 'reading his opponent's hearts through their blade' thing Ichigo has, but I think that pinning that on anything supernatural is taking the metaphor too seriously. It's conceivable that there might be a scene somewhere might somebody goes 'wow, he's mad! Just look at that Reiastsu!' or whatever, but I can't recall that ever happening.
Might be forgetting some filler mind-reading baddie, but I'm pretty sure that's not what you're talking about, if I am.

I know about Ichigo's "feeling his opponents' hearts through their blade" thing, but like you said that seems metaphorical (although, Kubo also likes to make his metaphors literal). But you're right: that isn't what I had in mind.
EDIT: Oh, I remember Rukia being able to tell that Ichigo was really depressed through his eyes, at one point. But that's still not quite what I meant.

Shonen likes to portray its bad guys as obstacles when they first appear. The particularly strong ones tend to embody some kind of nigh-impossible hurdle to overcome, and to sell that effect, we usually know nothing about them, and they just seem "unfair". It usually isn't until the hero has some sort of "epiphany", or learns a moral lesson, that we learn how human (and ultimately, flawed) the villain was.

The closest I can remember to that is Uryuu commenting about how Ulquiorra's Reiatsu feels oppressive. And that's a pretty big stretch, if you ask me.
But I don't feel confident enough to say that it's definitely never happened, either.

Ichigo says he can usually tell when his enemy respects him, when they don't, what they're fighting for, and whether they're ultimately good or bad. He couldn't sense anything from Gin, because Gin didn't care about fighting Ichigo whatsoever. He knew Gin had some hidden motive, but had no idea what.
Gin was just like: "... ...Well shit..."
