In some ideas I am dabbling with, I decided that I wanted a character of mine to sometimes hunt and gather for herself and for friends to help them out for food. Particularly, I had in mind for her to hunt a lot of goose, in part, inspired by the fact that there are a lot of Canada geese in my area to the point where they are a pest-species and I've idly thought of the prospect of what I would do if I found myself having to live like Katniss Everdeen. I've openly wondered if my local trash-eating geese are even edible and what they would taste like - if they would be horribly gamey. I've never had goose of any kind (even domestic), so I wouldn't know.

I just did a search for "wild goose recipes" for research. Very easy to find. Bless those rednecks! There is even more temptation to see if I can find someone to bring into my life to teach me to bow-hunt. The recipes I read actually sound good.

I am not a stranger to game (even if I am to goose). I grew up with relatives who hunted and have eaten venison and elk. I tried a nugget of barbaqued black bear once. I don't much remember venison save that my dear late grandmother's venison stew was amazing and the one wizened old deer that an aunt shot that my mother crock-potted was gamey and horrible. Bear just tasted like "meat" to me. Elk steak is something I miss - it's like a very good, lean grassy beef. I do fish actively, though, and have my own self-discovered recipes for freshwater fish.

Anyway, I was thinking that this thread can be a place for those with outdoors knowhow to share their knowledge and those who are seeking said knowledge to research their characters who hunt and gather (whether writing a hobby-hunter or you need your elf-warrior to know how to dress and cook a deer in the dark forest) to ask questions. I find this an overlooked area of writing research - brought to mine for me when I needed some and have some questions.

Recipes found online, can anyone describe to me what wild goose actually tastes like?

Just to get the ball rolling, let me describe to you what I like to do with bluegill and rock bass. They are common fish, considered pest-species in some areas. They are small, bony and the kind of fish that some fisher-folk just toss back in favor of larger bass and trout. I find them quite tasty - a mild white fish, but they are VERY bony.

Upon catching them, I like to "brain" them by sticking a knife behind the eyeball and stabbing down and scrambling, because I don't like to scale them while they're still alive, which some people do. They can also be shocked in ice-water if you can get them home quick enough or have an ice chest. Run a knife along them to scale them. From there, they can either be belly-cut and gutted or fileted. to filet, make a cut either behind the gills or at the tail and run the knife along the spine, each side, then take tweasers or a hemostat and yank out any small bones. If you opt just to gut them, you'll be eating around the bones.

I like to marinate them in either lemon juice and pepper or rub them with olive oil and garlic and sautee' them lightly in a pan. They go well with plain white rice this way. I also like to pat them with bread crumbs (Italian style is good) and deep fry them. They're good with french fries this way. You're going to need a good catch to even want to bother them. I tend to take four fish about the size of the flat of my hand for a meal just for myself. Anything really tiny I throw back.

Even if you filet them and yank away bones... there are going to be little hair-sized bones. You will miss one or two, so eat carefully - but they are good if you like fish.

Spoiled urbanite, here. I haven't seen a living non-human mammal in years. I've forgotten what they sound like. I cannot recall their smell. I'm only slightly exaggerating.

That said, when the zombies take over (or vampire overlords, or technological singularity) and we've all got to live in either the wilds or the farms to survive...or, hey, maybe I won't even wait and just do this thing for recreation or lifestyle...I like the thought of rabbits.

There can get to be an awful lot of them. They apparently can get scared or stressed to death, although I prefer killing methods where they don't suffer.

Meat preparations are definitely something I'm curious about...although I'm also interested in keeping rabbit pelts. Apparently tanning hides can be very difficult with enzyme sources and curing and lots of time, or it could be a quick soak in alum for like five days with occasional stirring. I think I'm getting off-topic so I'll stop now. tongue
