Creating Cultures for Fantasy Species/Races

Hello, this is my first time here and this is my first project, so I apologize if I seem a little too fresh. >A>()

I started creating a fantasy/urban-fantasy world for an RPG last year, constantly going back and forth, revising it. But now I've kind of hit a plateau with creating the fantasy species and races. D: While I've been able to write the physical aspects of the species, I'm having a hard time creating realistic cultures for them. Because it's set in a more urban/magitek setting, I want them to be more modern or up to date but still feel like they're in a fantasy.

Can anyone give me some advice?

What fantasy races and why are you having difficulty?

My main problem is trying to create the cultures with all the stuff I already came up with and making them all work together (they live on a Flat World that is floating in the middle of space and discovering where they came from is part of the story).

My races are: Mani: Elves. They are a race of crafters and marksmen and aren't very good with magic. They generally assimilate to the other races' cultures. There are three sub-races: Shorian, who live on the shores of a tropical island, Barrowian, who live in the mountains, and Adisian, who live in wastelands.

Dagoh: Beastmen. They are a physically strong race but aren't very good support or debuff magic. They worship the moon and sun as a Mother Goddess. There are two sub-races: The Lus'Oh, who focus on worshiping the moon and are more canine-like, and the Sus'A, who focus on worshiping the sun and are more bear-like.

Faen: Fairies. They are a social race who are good at support magic and have a good magic-resistance but aren't physically buff. They worship the elements versus actual deities. There are two sub-races: The Nymphia, who have more bee/wasp-like wings and live in coniferous forests, and the Spritus, who have more butterfly/moth-like wings and live in valleys.

Zamael: Human/Demon Hybrids. They are a fast, dexterous race but have low magic resistance and are bad at support and healing magic. They live in the wastelands under a floating city. Commune with spirits.

Geonomes: A humanoid race covered in crystal. A laid-back and friendly race who excel at both offensive and supportive magic but are physically slow and clumsy. They worship two giant crystals and live for parties and celebrations. Generally live near large deposits of precious metals and crystals.

Bahu: Human/Dragon Hybrids. Physically strong and fast but is bad with magic and debuffs. They live in traveling clans and are highly superstitious. Come in two varieties: Younglings and Elders. Only a select few Bahu can mature into Elders, while the rest stay as Younglings. Elders generally lead the clans.

Galatains: Golems. An asexual race made out of stone. They have high physical defense and are very dexterous but are slow and aren't very good with healing/support magic. They are born from primordial pools found in a mountainous area. They live in colonies that surround the pools they were born from and function like a bureaucracy. Instead of a theology, they hold stories in high esteem.

Pengu: A race of small, flightless birds. Are fast and have a high resistance to magic but are glass-cannons, defensively. Were designed as bit of a joke race. They are generally employed by the other races for lower level work. Each Pengu is part of the Pengu Guild, which acts as their representatives in politics through out the various factions.

Aengella: Angels. They are a race that excel at both healing/supportive and debuffing magic but are physically weak and slow, despite being really tall. They worship the stars and other celestial bodies, believe they are descendents of living stars. They live in a giant, floating city above the Zamael's wasteland and have a very blood past of conquest and slavery.
