I'll have to throw in votes for many of the things ufotable has done, mostly because of the amazing consistency in animation - you can screenshot pretty much any moment of those fight scenes and see little sign of bodily distortions, tweening, etc. And Kajiura music is amazing.
The first Kara no Kyoukai fight they did is a little less "epic" than some of their later work, but will always hold a special place in my heart.
Saber vs Lancer had brief bursts of epic, but was too slow and fragmented overall.

I'm usually not impressed by the technical aspect of fights, so I tend to like them by emotional impact, or by other details, like how fun they are.
Magical Girl Lyrical Nanoha Striker S had a few, in particular Teana's and Subaru's last battles against the Numbers. Nanoha's blasting of Quattro doesn't really qualify as a fight, but it's a great blast nonetheless. Probably my most viewed anime clip of all time.
Xelloss actually fighting is also a highlight.

What are your favorite anime fight scenes?
Mine is from Yu Yu Hakusho, during the Shinobi Sensui arc. Yusuke fights Doctor Kamiya, an evil doctor who is poisoning a hospital (bet you didn't see that coming). The animation in this fight is short, but sweet. The way the camera moves at 1:24 as Yusuke pivots and ducks around the doctor's attacks is just... wow.
