"You are never taller then when standing up for yourself"I don't know, but it was originally just the Nightfort, and Deep Lake didn't exist until Nightfort was abandoned.
From what I can find, the Nightfort was the first castle, but there is nothing on when the others where created, and since they are all positioned directly over the built in gates in The Wall it probably wasn't that long after the Night's Watch was founded.

Well, Nightfort was definitely the first, and probably the only one, at first.
After that, Eastwach-by-the-Sea and Westwatch-by-the-Bridge were probably built, as they are on the two sides of the Wall.
After them, I'd bet Woodswatch-by-the-Pool was built, given the similar naming pattern, followed by the gates, Snowgate (later renamed Queensgate), and Rimegate, then the guards, Greyguard, and Greenguard. Let's say those are the only ones that were built, so far.

How old are you assuming the NW is by now? There've been twelve previous commanders serving from election til death, I guess if we assume a lot of them were middle aged men and the life expectancy isn't great we can say an average of maybe 15-20 years each, that's already a good 200 years. I guess a healthy dose of Chronic Backstabbing Disorder would lower that figure considerably.
OK, I'm really confused about timings now. What time is it for Rodrik, Maylas and Howel?

Well, in about 8000 years there were 998 Lord Commanders, so that's a turnover rate of about 8 years. Now, this doesn't mean that each one served for 8 years, just on average. The Night King himself served at least 13 years, if you count his rule. Now, the 12 before would've been approximately 96 years, but I'd assume the first one held the office significantly longer than the rest as he was probably younger than the rest, so I'll bump that up to about 125 years. Plus the 10 years under the Night King bring us to 135 years after the formation of the Night's Watch. That is now the official time frame.
Rodrik would be late afternoon as it takes awhile to go from Dreadfort to Winterfell, and awhile to flay a man. Howel and Maylas are early afternoon as Maylas has just seen the Boltons, who, as I said, would take awhile to get to Winterfell, but wasn't too long after the meeting.
