Now I wonder how Soft Museum would've looked like as a course. Racers constantly getting stuck in pits their vehicles make, or forcibly being bounced around?

As a whole, Spring Valley is more iconic.
I know for a fact that its the level I saw the most as a child.
I was referring to the stage more, which actually does revolve around the player rescuing Ni GHTS from the tower(in fact you barely see any of the city). Dude Twin seeds is seriously on the cover of the game, appears in the intro and has more story significance than Spring Valley does. They even play a variation the game's theme song in it. Both have been featured outside the game but I'd say Twin Seeds(level) is more iconic of what the series is about, especially considering how much it's centered around the tower.
You spent saw Spring Valley most as a kid(which BTW doesn't make it fact it's more iconic) because it was the easiest and 1st level. I mean it's certainly iconic in its own right, but I wouldn't say the most iconic one in the game.
