If the person is bloodthirsty, try God of War. Might be a bit complicated for a first-timer, but it's damn good at making you feel like you're all that and a bag of chips. That's a very good feeling to put in a new gamer.

RP Gs: Final Fantasy IV, Final Fantasy VI
Platformers: Metal Storm's normal mode, Super Mario Bros 1-3
Action: Mega Man 2
Shooters: Thunder Force 3
Balance of all elements flows in the masters' bodies. To be a master, find the elements and fight the subconscious.Check out some of the really simple Flash games on Newgrounds. Skinny is a good one in particular.

(Yes, the other 40% are for harder games. IWBTG is hard but not nearly as hard as people make it out to be, and I am probably being too generous with the percents).

Dwarf fortress is a bad idea. Non-Gamers will look and say AGGH WALL OF TEXT and run away.
- For FPS I either recommend Doom 2 or Halo.
- For RTS I recommend either Starcraft, Red Alert, or Warcraft 2/3
- Ratchet And Clank Up Your Arsenal is probably the most newb friendly game of the series.
- I could recommend Assassin's Creed although some may be turned off by it in which case just give them Sly Cooper.
- Jak And Daxter is probably the best newb friendly platformer that I know of.
- For RPG's I recommend one of the older final fantasies. I DO NOT recommend the dragon warrior games.

Tetris and Bejeweled are obvious choices. Both have proven to be very popular among new/casual gamers, and will also improve their skills when they move onto other, more hardcore games.
With Tetris, hand-eye coordination is important, especially during the higher levels where the blocks move quick, and this focus will come in handy when they move onto more action-orientated games where acting quickly and efficiently is important.
Meanwhile, Bejeweled has a more strategic approach, making players look at the entire playing field for the best combinations, often under a time limit. These kinds of skills will help in more strategy orientated games.
For first time RP Gs, either Puzzle Quest for it essentially being Bejeweled with RPG elements, or Atelier Annie. I'm serious about that last one. It's light in both content (no generic save-the world with angsty teens plot here, although the humor may go over the head of first-timers not used to anime or JRP Gs) and difficulty (in a genre where difficulty is often equivalent to how much you do the tedious task of level grinding), doesn't really have a way you can lose, but encourages micromanagme anyway so that you can get the best score (which would prove useful for games like Civilization, even if the player never touches another JRPG in their life)
My standard Anime Theme song game variant rules: [Censored by ACTA]Let's do this by genre. Games are in order from most to least sure that this is a good choice:
Eastern RPG: Chrono Trigger—low grind, relatively easy fights.
Western RPG: Freedom Force—goofy and simple.
Stealth-based game: Second Sight, because invisibility is pretty much easy mode.
Tactical RPG: Final Fantasy Tactics A 2.
Tower defense: Defense Grid The Awakening.
FPS: Far Cry 2 (introduced after Second Sight, since there's a bit of a learning curve.)
Platformer: Hard to say—Trine, maybe? (I've heard the Kirby games are easy, but I've never played one.)
Adventure game: I'm going to give in and say Machinarium. This genre is not very noob-friendly.
(When I actually tried this, I used Plants Versus Zombies, but my mother had serious trouble with it—for instance, she didn't realize that plants did fixed damage per hit, so she couldn't figure out that putting a plant farther away from a zombie made the zombie less likely to destroy the plant.)

They are, but if they don't realize about the copy abilities, they may try to go into areas without having the requires ability. New Super Mario Bros (the DS version) would probably be a better choice for a first Platform Game, as it's probably the easiest Mario game overall, and the power-up system is simpler than Kirby's
