* It's in her memory that Dracula never takes any direct action towards humans. This is also why he consistently treats Jonathan with kid gloves throughout the movie, even though he's clearly tempted a couple of times.
* And it was known amongst the humans too. This is why her castle was a place Jonathan could visit - and more importantly, why her image was retained and not destroyed. Of course, Jonathan being Jonathan, he doesn't connect the dots

* Because of how shocking it was, most vampires and the wider monster community have kept to themselves in the years afterwards. This has the side effect of stunting hatred towards monsters in this world.
* Dracula himself knew this, and that's why he never sought revenge to any significant degree - as well as treated Jonathan relatively well. What good would it do to create animosity that wasn't there, after all?
* Who her husband was isn't ''officially'' known in the human world, but everyone figures it's Dracula. Everyone knows he's still around, grieving, even in 2012, so he's thought of as a ByronicHero. This is why, despite the "bleh, bleh bleh" from Hollywood imprinting, Dracula gets ''immediate'' respect/admiration from the crowd when it's clear he's the real deal, despite not looking anything like what pop culture would indicate. They know the broad strokes of his past and thus are willing to give him a hand on short notice.
* Were Dracula ever able to visit her castle ruins, he'd be welcomed by the descendants of those who lived there around the time of the attack. (Jonathan wasn't paying close attention to the story when he visited, even though he clearly saw an image of her. He seems the type to gloss over those specifics.)

* It was ''mostly'' to give Mavis a safe place to grow up until she could defend herself though.
* He was already a Count with decent management skills and needed something constructive to do. Running a hotel that would serve as a sanctuary for monsters would be enough of a distraction - and enough of a cover story to distract most people from his grief.
* Jonathan was the first in a ''very'' long time that Dracula talked about it to. It's doubtful his friends and staff are aware of it.

Everything suggests that Vampires go through the same stages of life as humans, just much slower. They are born as babies, then age through childhood and puberty untill they reach adulthood, and as proven by Dracula's father they eventually grow old. No relatives of Dracula older than his dad are ever seen, so they most likely eventually die of old age. It just takes many centuries for them to get to that stage.
