Actually, Mrs. Gleeful has had her memories erased. If you pause the episode, you can see a memory jar that says "Mrs. Gleeful".

It has been proven that erasing your mind many times over could cause permanent memory loss. You can and will lose memory of who or what you were before you erased your mind

As it has most likely been revealed that it is Old Man Mcgucket that's the author of the journals something kinda hits me. The Machine in the hidden basement of the Mystery Shack is of course built by Mcgucket. He has a knack for technology after all.

But here's what the real Fridge is kicked in: Why is Mcgucket insane? His mind got warped by Bill. Bill wants something with the machine and invaded Mc Gucket's mind and wrecked it. It is implied this might have happened several times before Mcgucket went fully insane.
