If the increase in detail is because of an increase in plots and continuity where there used to be little, then it's Continuity Creep.

My prime example is Reflections of Eterna, where the first couple books covered half a year each, while the most recent six or so barely manage to cover multiple Simultaneous Arcs over less than a month.

Exponential Plot Delay.

Kudzu Plot (in which new subplots sprout up faster than they get resolved) is also related, as it's a major cause of Exponential Plot Delay.
