^ That's when it becomes habitual (usually with someone who doesn't understand or appreciate previews). I don't think we have a specific term for a single instance of self-correction, no. At least, not beyond "self-correction". My usual comment in such cases is "oops, my mistake" or words to that effect. But I do use preview, so it doesn't happen very often. :)

Eh, I used to do that all the time when I started, when I wasn't fixing just one or two typos at a time. It's only a problem if you do it overandoverandoverandover and never learn to use the tools of the site to cut down on it. (Like using Preview.)

Most of the problem is because the page is locked out for up to twenty minutes when you click edit, and if you do that again and again, especially on a really popular page, it makes it really hard for others to edit.

This rarely happens to me now too, because I've gotten better at previewing my edits before I save them. But, again, at some random points even now I'll accidentally make a mistake in my edit, realize my mistake and then fix it in my immediate next edit and point it out in the Edit Reason Box. But, since I know that an Edit Reason shouldn't be too long (according to Administrivia.Edit Reasons And Why You Should Use Them, an Edit Reason should only be about 50 words or less), I wanted to know if there was a shorter way to say "I caught my own mistake and fixed it." Using the term "self-correction" sounds perfect, so I think I'll use that from now on. Thanks Xtifr! :)
