I believe the rule is to use the most recent official spelling so the newest one should be used.

Giegue is accurate for the first game's pages, as it's the only name used to refer to him in that game. When referring to the series as a whole, use Giygas.

We'll eventually get an Administrivia up for our translation policy, but this wiki runs on Valve Time.

Within the context of Beginnings (the NES game), his name is Giegue.

Within the context of EarthBound (the SNES game), his name is Giygas.

Within the context of the franchise as a whole... we technically don't have a rule, but "Giygas" is the name from the more recently developed translation.
