Well, if I had to guess, I’d say that it’s probably safest to list both of them. Call her by her stage name, and then, in parenthesis, say: Real Name: X.

Oh yeah, I do intend of mentioning both names. But for the purposes of naming the page itself, should it be her real name or her stage name?

I think it should be the most-recent name she goes by professionally. Pages here get renamed if a creator changes how they're credited, such as James Roday Rodriguez and Suzy Eddie Izzard.

Creator Page Guidelines has the rundown: the page is at their most recent preferred name, the list of roles can indicate alternative ways of crediting, and redirects can be used where applicable.
