Back when it wasn't as easy to find out the name of a movie you happened to catch midway through on cable, I remember watching the last act of a gory action movie. The hero was a Kurt Russell style badass (I don't think he had a mullet, though, as the movie was a bit more recent than the 80ies), and the last confrontation with the bad guy took place in a storage shed.
The bad guy was impossible to kill, despite the movie featuring no supernatural elements otherwise, to the point where it drifts into parody territory. The hero uses a forklift to stab the villain in the stomach, and the villain laughs and keeps shooting. The hero then turns the forklift's forks upwards, pulling the bad guy's intestines out. That still doesn't seem to kill him, and he keeps laughing and taunting the hero before finally dying.
The closest comparison I could find is the ending of Club Dread where the killer's guts are pulled out by a motorboat, so it might've been something in that style.
