These are improperly formatted quotes, I guess, and not actual examples.

The use of words in square brackets and of bracketed ellipses are proper if a quote is leaving out some of the original text. I'm not sure if this is plagiarism, as it does cite the book title and the author.

Yeah, it's not plagiarism if you cite where you take it from.
