You don't really get much out of it, so it's not really a big deal if you don't feel like finishing it. However, a good juggernaut will just roll right over them. The huge amount of deployment slots you get is more of a trap than anything else.

Plus, pure Jagens often have bad growths because they have something holding them back (sickness old age, stuff like that)
Why would we assume that Gunter's child is fully grown, though? The way the story talks, it's like he was almost certainly in his prime as a knight. So I'd say 24-30 is more likely. This also fits better with how he appears now, so if there was 20 years in-between, he'd be pushing 50, tops.
And yes, while old age is clearly slowing him down, the initial stats are still silly amounts of shit, even for a Jagen. Like, he barely gets to fill the role because Corrin grows so quickly that it's almost always better to have Corrin tanking and fighting instead of, say, Gunter softening and Corrin finishing the job (compare this to the relationship between Fred and Robin that has them do exactly that—at least as far as Lunatic and higher go). Also, you didn't address the Conquest subversion that put his stats more inline with how someone of his standing should be. He gains all of 7 levels and many of his stats rocket up faster than could actually happen even if he were somehow gaining +1 in that stat every level. This is a big enough boost that he can actually tank and fight (at a marked disadvantage, mind) Conquest 25's enemies, even on Lunatic, with a very high probability of surviving.

Maybe if it took place in the modern day, but in medieval times, I find that explanation highly dubious. Sooner rather than later is far more likely, especially when it comes to being a knight in active service who could end up dead any day now. Also supporting this: we know that Fates' cast is so bad at keeping it in their pants that we got the Deep-Realm parental neglection junk, so...
To be fair, there is precedent to the idea that he could've had a kid later in life. Some characters can have kids somewhat late in their lives (such as Reina, Fuga, and Gunter himself if the Avatar S-ranks any of them).

Oh, no doubt about that. Still, the possibilities existing means that it's not too far-fetched to think that Gunter may have had a kid when his years have really started to pile up. Hey, it's his choice when to have a kid; I'm not judging.
Personally, I always felt the reason for his stat growths not being all that good was because the developers thought it would be funny when he turns into the penultimate boss fight and some players scream "Where the hell were these stats and the Dragonskin skill when you were still on my team, you jackass?!

Huh. It's been a while since I last played that level, so I don't recall the Great Knights giving me any more trouble than Gunter himself.
I am at least content that the dragon himself is overshadowed by no one.

So far this team is looking to be good, with a Skillful Butler, a Speedy Falcon Knight, a Strong Great Master, and a Tanky Ballistician.
Although, I'm still wrapping up the first one's playthrough before I move on to the others...

Well, that's kinda the whole point. The mooks aren't very threatening and Gunter is even weaker than them, which just makes the whole situation bizarre, if not funny.

About Gunter not being any more powerful than the mooks, I personally interpreted it as some part of Gunter trying to fight off Anankos's control because he doesn't really want to hurt the Avatar.
Kind of like how Takumi, despite his initial distrust of the Avatar, having a relatively fast Support rate with them, which shows that he really does want to bond with them. Or Xander's stats not being very high in the boss fight against him because him causing Elise's death hit him really hard.

iirc they actually directly explain the latter in dialogue afterward. Xander wasn't actually fighting with all of his strength- Corrin points out as such. It implies that he was allowing Corrin to pass while still living to his duty as next in line to king of Nohr.. plus it's likely he views it as atonement for his sins.

x3 And we know it's entirely possible for them to live to the same old age that we can and still fight, even if they aren't as strong as the younger fighters. Hell Nergal and Athos were 1000+ old humans in Elibe. We even know a curse can backfire and make a person eternally young like Nyx. This isn't that out of the ordinary for FE.
Hell the Dragon of Wisdom can bestow eternal beauty on a person.

x4 That's plausible, although I find it hard to give up the mental image of Corrin standing there, her hand on Anankos!Gunter's face as he swings feebly under her arms while she looks back at Jakob, asking, "Should I feel sorry for this?"

x2 Aside from this not being Elibe, there's no real indication that Gunter falls into the same category as such extreme exceptions as Athos and Nergal. Hell, the closest thing Fates even brings in to them is the Rainbow Sage and he's actually a dragon.
