Bewitching EyesMokou's hair: It's just a waterfall of ash that continually falls from her head as it burns from her inner fire as soon as it grows/reforms. This is my idea.
Alternatively, because she's human and not a pure lunarian, her hair still aged normally or something.
Or because the elixir rebuiklds the body based on the soul's impression of itself, and Mokou sees herself as an oldbody, her hair is gray because she expects it to be.
Reimu's hair is almost always black (or purple in PC-98, but whatev). POFV it's brown, but that's the only exception I can remember.
And Marisa's alsways been blond (apart from PC-98, again).
PC-98 is kinda Broad Strokes kinda canon.
Oh, Byakuren probably didn't have gradient hair when she was a human, but that's just a wild guess.

Fear of death actually, as I understand it. Vanity also factored in, but that's more why she looks like a pretty young lass rather than a withered old hag. A side perk, so to speak.

Interesting that (According to SOPM), without her buffs she's just as weak as a normal human. Of course, she has a scroll that autocasts all her buffs for her, so you really need to take her by surprise.
And have to deal with accusations from that annoying Aya (accurate though they may be) that she started another fire? Pass.
