But Batman could abuse flaws in Doom's psychology, like his hubris. Batman's only real threat is people he knows nothing about or can't predict.
You forget that Batman is a Memetic Badass and that he has fought just as many threats, over a greater period of comic time (since the late thirties, more than two decades before Doom). Batman shot freakin' Darkseid in the face. Batman has beaten Superman (to my dismay, since I prefer the Big S, but I digress). And Batman doesn't just sit on his ass and do nothing when the Justice League is facing cosmic threats.
Like I said, end result: Batman defeats Doom's overt scheme, but the whole thing turns out to be a Xanatos Gambit.
^^^ Batsy's beaten invincible people before. He's beaten armies of robots. He beaten magicians. He's faced off against armies of conquerors, and supervillains with light and energy weapons. He's faced the best and the worst. He's got more than just a chance, he's got a place as a real threat.
The "with enough prep time" thing is an annoying meme and not really true given Batman in the comics (it's actually usually a mix between having good intel, a basic plan, a lot of making little plans on the go), but you're still looking at DC's greatest tactician, who knows how to get into his opponent's head, into their strategies, and into their carefully fortified bases.
Him facing off against Doom, arguably Marvel's greatest tactician, would be such an awesome matchup I'm truly surprised no one thought to write it yet. It's clear that both of them would be evenly matched, and it probably wouldn't end up cut and dry for either side.
This is case where trying to decide off of their assets is a bad idea. Not that I'm a fan of vs arguments in the first place, I'm here to spec about what kind of comic such a thing would be.

Batman regularly fights guys with guns, madmen in costumes who sometimes have guns, and the occasional ugly mutant who's as about as dangerous as an escaped gorilla.
Dr. Doom regularly fights rebellion in his country, four super powered beings that can rival the heat of the surface of the sun to ignite the atmosphere, bench press 100 tons, create invisible light bending artillery proof force fields and a man who is practically immune to physical damage and is likely to be carrying something worse than a forty five.
Dr. Doom made the Juggernaut's helmet, Dr. Doom has an army of robot duplicates, Dr. Doom speaks in third person, Dr. Doom can do magic. Batman is defeated.
The only chance Bruce Wayne has is to use the ridiculous funding of his company to purposefully destabilize Doom's small country but Batman's conscious would get in the way.
