That's perfectly alright in my book, as long as they remove the old one in place of the new one, it's still one moment for the troper on that page. It does go against the spirit of things a bit, but only people who are aware that this one person keeps changing his mind will notice. The goal is that some stranger looking at the page will only see one moment listed for a given troper.
He's not messing up other people's entries, and he's not extending the page by piling on moments. The behavior is somewhat contrary to the trope, but he's not making a mess of the page. If he wants to think he's some kind of awesome troll by constantly switching things around, let him feel that way. As long as the page remains orderly, it doesn't matter in the long run.
And looking at the edit history, I'd say you're more in the wrong than he is for editing his entry. It's in the Darth Wiki after all, as long as he follows the rules for the page, he can do what he wants with his entry. You, on the other hand, are breaking the fourth rule on the page, No contesting entries. This is subjective, the entry is their opinion, by editing someone else's entry.

I'll be honest, this thread is 'inspired' by a specific incident but I think it's something more general worth discussing.

Currently, there's one irate troper who has been taking it upon himself to keep coming back to the page and 'update' what he thinks the DMOS is - currently he's on his third seperate one, and it's taking the piss I think. Reading the (DarthWiki.Dethroning Moment Of Suck) page, it's pretty clear what the purpose is:
This is the worst moment, in your mind, for any character, work, series, or entire franchise. This is the nadir, the lowest point, the polar opposite of the Crowning Moment Of Awesome. It is the moment you hang your head in shame when thinking about, or pretend never happened.
And remember you're only allowed one moment, so if you've got more than one, than decide which was the worst, not just any moment that ticked you off or offended you.
Basically, I'd like clarification - am I in the wrong for removing 'new' DMOS entries made by specific tropers, or are we truly allowed to flip-flop back and forth between moments?
