Every Pokemon will show up at some point, just not all in the same title, so they still need those models.

You say that like they'd stop doing dexits if they had more time. Leaving aside that the ever-increasing pokedex makes including everything increasingly infeasible, limiting what's available is clearly part of the overall strategy at this point. Not only does it incentivize getting the DLC, it also causes the competitive meta to vary a lot more between generations (and as DLC drops). Which is good
So far, only very few Pokemon haven't appeared in at least one game on Switch, I think less than 20. Definitely less than 10 families. I know Blitzle (but that's confirmed for SV DLC), Pikipek, Furfrou, and Minior and their evolution lines still haven't made an appearance on a main-series Switch game, there may be a very small number of others.

Dexit was not inevitable, they had no problem fitting 800 Pokemon on the freaking 3DS, they could easily fit 1000 on the Switch. Hell, Home is a Switch game and it can hold all 1000+ Pokemon.
It is 100% not a realistic hardware limitation that they cannot fit all the Pokemon in one game.

I don't doubt it's not a hardware limitation. If they really wanted to, they could use the bigger carts like Tears of the Kingdom. But I can imagine a "not worth the workload" reason.
My musician pageI actually don't think Dexit is a necessarily bad thing at all, if it were explained using gameplay terms as some species are just not native to, or are actively harmful to, a region, like with Gen 5. Gen 7 would've been a perfect place to do so again, as Hawaii has to be notoriously protective of their ecosystem.

The thing is well it's always considered good at singles. Most thought it would be really easy to counter in doubles due to predictablity and hence not as good.
Turns out people were way off.
i really wouldn't say that they were way off, nor was predictability it's issue (there are a ton of predictable pokemon in VGC), nor did the community ever think it would be easy to counter
if we look at why palafin really didnt do well in Season 1, (hovering around 5% usage) it was because:
almost as soon as Series 2 started, Palafin doubled in usage because the majority of meta pokemon were no longer water resistant, on top of Dondozo's Order Up being patched.
and to be quite honest, most of the reason it's seeing so much play is because it's an effective answer to Ting Lu, Flutter Mane, and Chi Yu (and Glimmora to a lesser extent). it doesnt have anything to do with VGC players not realizing it's strength, it has everything to do with the fact that it's really good against the most prominent threats at the moment.
