Lets just say History of Trunks is canon to the anime. That makes sense to me.

Toei's DBS anime contains references to Toei's material from their DBZ anime, because Toei likes Toei's additions.
This isn't really news, and it's hardly the first time Toei referenced a point of contention from what Toei added to DBZ. They've no more "canonized" History of Trunks than they "canonized" Ginyu's survival and adventures on Earth.

I wonder how future Gero reacted to finding out that Goku died of a heart disease. You think he was happy, or pissed off that he'd spent all these years plotting revenge only to have it all be for nothing?
He might not have ever known. It was after his spydrones stopped monitoring, IIRC. It happened in Goku's house which the Androids only had a general vicinity for. He continued his vengeance plans after it occurred. Depending on how events in South City went in the Future timeline, it is entirely possible he went to his grave never knowing that vengeance had already been cosmically denied him.

Not everyone sees Super's anime as canon, and Tobias has pointed out (one of many) very good reason why. Toei loves to reference their own additions.
There isn't even a consistent definition of canon for fictional works. Usually it comes from the rightsholders but they have never used the term.
Edit: On Dr Gero, it seems like revenge on Goku wasn't actually his primary goal. Trunks and Goku both believe he was going to resume his plans for world domination and Gero hated Goku specifically for ruining that goal. He does say he will have to continue that goal himself.
So he wants revenge on Goku, but it's also that killing Goku is a necessary step in resuming his world domination plan.

That explains why he just attacks a random city in both timelines.
His plan was probably to go around, fuck things up while testing his new abilities like we theorized, and then Goku came to him and he said Early Christmas baby! and jumped at the chance for some killing.

What? But the latest episode showed exactly the History of Trunks special, except with Trunks having blue hair. That means the History of Trunks special is now canon. It's not really up for debate.
