And how is "flying impossibly high in empty sky" supposed to fill their time? It sounds kinda boring, really. And 17 doesn't even like flying, even when there is an actual discernible landscape that changes as you go by.
You know, the one time Bulma just flies there, it's after Piccolo has merged with Kami. Maybe the lack of a proper guardian rendered those defences null and void.
Or maybe the plane Bulma was using is just that good for flying that high. I mean, she built the impossible Time Machine after all. I wouldn't put anything past her.

I'm totally willing to excuse Bulma flying a plane to the Lookout on grounds that it's f*cking Bulma. If anyone can build a plane that can beat the Lookout's defenses, it's her.
There is no such thing as an absolute. Invulnerable, impossible, unbreakable, etc. are relative terms. Something is only unbreakable because no known means exist by which to break it. When an unstoppable force meets an unbreakable wall, the one that gives is whichever is less unstoppable or unbreakable.
Nowhere is this more evident than Dragon Ball, in which overcoming limitations is a major theme. To Krillin, Goku is omnipotent. Impossibly powerful, insurmountable. A level of strength and ability unachievable by mortal man. But to Whis, Goku is merely off to a decent start. Krillin may not be able to perceive or fully understand the difference in power between Goku and Whis, both of whom have long since surpassed the label of "all-powerful", but that distinction exists nonetheless.
Planes can't reach the Lookout, but Bulma's plane can because Bulma's plane > Lookout defenses.
