Yu Yu Hakusho is definitely worth a watch if you are interested.
The thing with a lot of these Long Running Shonen series is that they tend to lose steam overtime. DBZ, YYH, Naruto, Bleach. It's happened all across the board.
I think One Piece tends to be the one exception to that and that's because it's story lends itself well to having more episodic arcs.
The other problem is that Oda takes breaks a lot more frequently than the anime does, so one chapter per episode isn't actually as sustainable as it sounds. Meaning we get the worst of both worlds- the pacing is slowed to a crawl, and we still get some filler. What the anime really needs is a hiatus. And really, it's one of last super-long running anime left that's never gone on hiatus.
It was a neat concept, and two of them were cleverly lived up to that concept.
The rest were just punched harder.

A lot of fighting is driven on instinct and muscle memory. Being able to read someone's mind might give you advance notice of a few hits, but it's far from the Story-Breaker Power writers try to depict it as.
Even if it did work that way, one would think it would also be pretty distracting to be constantly trying to scan someone's mind while also engaging in a fight with that person. The required amount of reaction time to read "I'm going to feint left then nail him in the jaw with my right", consciously process it, then calculate a response before the blow has already landed is insane.
Even before superpowers are brought into the mix, things happen really fast in a fight. Thinking is not a free action.
