Both Goku and Cell had successfully self-inflicted zenkai, and what Vegeta says won't work isn't specific. He could have meant that he'd botch the injury attempt.
Yeah, either he'd overshoot and straight up murder himself or he'd be the one Saiyan in a billion with a scrap of self-preservation and the wound wouldn't be mortal enough to be worth a zenkai.

Cell had a self-destruct feature and Goku was curving Kamehamehas into his own chest with the added help of intense gravity. Vegeta doesn't have a self-destruct or intense gravity.
Captain Ginyu would probably be a master of self-inflicting zenkais if he'd gotten to keep Goku's body and had some of the pertinent info for using it.

Hell that's something Vegeta has over Goku, a brain capable of realizing he who fights and runs away, lives to fight another day. Meanwhile Goku is for the most part "Dragon Balls! BRING ME BACK TO LIFE!"
I think it's also like hitting yourself, you never do it as hard as how you could to someone else. So Vegeta botching it is highly likely.
I'm just thinking back to all of Vegeta's fights and how he just kept fighting superior opponents until he either got knocked out or died. I can only think of one instance where he ran away.

He also wanted to attain immortality before the Ginyus arrived because he knew he couldn't take them either.
Vegeta rarely actually attempts to run but I think that's more of a survival instinct than anything else. When he's backed into a corner, he doubles-down on his ego and tries to bullshit his way through on pride alone. It's a defense mechanism I like to call "Caging".

I both love and hate this.
I love it because the idea is brilliant. I hate it because that kid is a sad commentary on America today.
