Well, he technically beaten Boros in an epically climatic way while still utterly outclassing him, but Boros is essentially Goku with even less morals and willing to wreck a lot of shit to get what he wants so on a good day, that's how I picture their fight going.
On a less good day, I see it more similar to Garo, where the latter is holding out at first due to his skill, but after a while Saitama just starts embarrassing him as he shuts down everything in his arsenal.
The absolute worst days would be...well everyone else who's ever tried.
It'd be a downhill struggle for Goku, but yeah, if his luck is good, I could see him at least not losing right off the bat like Boros and Garou

Also, unlike Briner, Holzman is not a professional VA with an extremely busy schedule packed with various anime he's working on.

His candy beam is crazy, but we've seen Goku dodge it at point blank range and his evil side blow it back at him. It is annoying to have powers that basically have to always fail to be balanced, but that's not a reason to never use him.
Vegetto's also the only time it was used on someone stronger than Boo, if that was always the consequence of him using it against a stronger party than it wouldn't be a problem.
The absorption is more of a problem, since it takes out an opponent and makes Boo that much more powerful. But Boo's implied a couple of times he'd need his opponent to be distracted to rely on it... but if people have no reason to expect it than it's a huge problem. But it'd be easier to just say Fat Boo can't use that ability and move on.
It's even easier to say that Fat Boo has no reason to use it, since...he's not evil.

Check out my art if you notice.They could've justified Buu's absorption in the tournament setting in one of two ways: either the people Buu absorbed count as eliminated, and Buu loses their power when their universe is erased, or the people Buu absorbed don't count as eliminated, and Buu needs to be eliminated to eliminate them.

Either way, that still lets Buu keep their power for the interim, which doesn't really solve the whole "Majin Buu (Jiren Absorbed) wipes the field in five seconds" thing. I mean, that's an exaggeration, he'd need to work his way up to Jiren. But still.
As Saiga noted, Buu needing an unsuspecting target does serve as a sort of limiter. But in a massive 100-person battle royale, there is no shortage of distractions for Buu to opportunize.
Letting Mr. Buu stick around may have been a mistake. He's a hard character to work with because he has both an easy-to-use and spammable tool for clearing weaker fighters from the field before they even have a chance to contribute as well as an easy-to-use and spammable tool for one-shotting stronger fighters, powering himself up in the process.
The only way he really works as a protagonist is if he only ever gets put up against fighters like Vegetto or Beerus who are so powerful that he ceases to matter anyway. He's only not a Story-Breaker Power if he's never relevant.

I agree with this....which is why it won't happen. Why? I don't even know, but even though it's easier to think of, Toriyama seems to prefer just writing Buu out every time.
Weaker fighters can still contribute to battles. A group of fighters can combine power into one to let him stand up against a stronger foe, like Gohan and Krillin did with Piccolo on Namek. Weaker fighters can buy time for others to build up a super attack, like Goku did for Piccolo against Raditz or Vegeta did for Goku against Pure Buu.
Cell was only defeated because Vegeta launched a distraction. Despite in no way being a threat to Perfecter Cell in a straight 1v1 fight, he could still opportunize off of the Beam Struggle with Gohan. He tricked Cell into pulling attention away from Gohan long enough for Gohan to unleash his full power and win the day.
It is a myth that the only character who matters in Dragon Ball is the most powerful one, and everyone else is just useless baggage.
Buu's Candy Beam, however, eliminates any possible benefit of teamwork. Krillin and Gohan don't get to combine powers in Piccolo so that he can stall for time; Buu ate them two seconds after stepping onto the field, because he has an unblockable instant-kill technique.

...Right. I'm just gonna admit it. I buy into that myth entirely due to how Tien, Yamcha and even Chiaotzu are treated. I've heard the argument about how the things that happen to them do serve a purpose (their deaths showing how serious things are, their defeats showing how strong someone is...except Chiaotzu who just seems to be there until he's not), but because it feels like they always specifically got the short end of the stick because Toriyama couldn't be arsed to care about them I suppose that's where the myth came from.
There are other characters who could have contributed more but never seem to be given the chance for one reason or another, but you are right that it's not totally true that only the strongest guy can do anything. It just feels that way when characters you like who aren't those characters who are the ones doing something.
In the end I have to admit that—and you all know I hate using this term—I'm just Salty.

One Strip! One Strip!If they're stronger, yes. But characters weaker than him get swept from the field, and that's the point. There are no opportunities for the kind of "teamwork to beat a stronger foe" thing that does, in fact, happen a lot in Dragon Ball.
As an example, during the Tournament of Power, Universe 11's fighters are noted as being not exceptionally powerful - Jiren excepted - but still make it through most of the tournament without losing a single fighter. They're able to do this because of their incredible teamwork and effective cohesion as a group.
If Majin Buu had been there, they'd all have been wiped from the board in the first ten minutes. Because he has an unblockable instant-kill technique.

It's a potentially fatal attack and killing is forbidden, so he wouldn't be allowed to use it. Candifying and eating someone killed them, iirc. The only ones who counted as "absorbed" were Gohan, Piccolo, and Gotenks, and that was a completely different thing
He can still candify them and let them roll off the edge.
