But Goku only went to see Zamasu because of Trunks coming back from the future to warn him about Goku Black. How could Zamasu become Goku Black if Trunks didn't travel back during the Goku Black incident?
I remember Goku Black saying that the time ring was what let him survive after Beerus Hakai'd past Zamasu. (it turns out Beerus wasn't completely full of shit when he said godly power would affect other timelines)
Goku Black existing at all is just goofy "the situation was created by itself" time travel tropes I'm pretty sure.
Zamasu’s situation is in a weird place where it’s stable, non-stable, and multiversal at the same time, based on whatever makes the plot work at any given time. It’s a lot less tight and well put together than Z’s play at it.
The bit where Goku only fights Zamasu because of Black in the first place, and thus Black exists because of himself, sticks out because neither regular time travel as described by Trunks nor divine Time Travel as described by Beerus and Gowasu work that way (regular time travel creates alternate timelines, divine time travel alters the past and future, neither create stable loops).

I think doing both is fine, it's just that the chicken/egg paradox with Goku Black sticks out even with both of those in place.
The primary explanation overall hinges on the fact that Trunks' timeline is further along than our heroes. So it's less that Black goes to the past and more that he's already affected the future (what we're seeing is "history," essentially), which is in turn linking back to the past so our heroes can witness it. That part works out fine.
But that still requires that there be an iteration where Zamasu becomes Black on his own without having fought Goku which, given Future Zamasu's stagnation before Black kicked him into gear, doesn't seem likely, and which is arguably outright impossible anyway if we're to believe the explanation we're given for how divine time travel works.
Yeah, the anime version of the arc has a paradox and continues to add weird rules to explain it as the arc continues. The time ring can't even explain it because there's no logical explanation for how things started.
The manga version takes out the Goku-Zamasu paradox, destruction rule and paradox protection to follow the previously established rules.
Both versions still have the issue of Future Trunks showing up earlier than he should have, though. Following the idea that time has passed equally in the timelines, when Black is in Trunks' timeline travelling 'back' should just take him to a post-Black Universe 7. He shows up a few days earlier, splitting the timelines and creating a timeline where Goku is saved, but there isn't much reason given for why he showed up earlier.
