Turns out, being in charge of a personal company is not so easy. Doki put out a statement
about the status of the delays in her merch's distribution, citing that the issue stems from her ex-director (no, it's not Mr. Man; in fact, Mr. Man was driven off by that ex-director) practically holding her merch hostage for two months now after Doki parted ways with them upon finding out they were power tripping and threatening her staff. So she's now her own company director and with several lawyers in order to learn how to become a proper businesswoman.
Pastors somehow being top in livestreaming doesn't strike me as particularly surprising given at least two religious channels are now the absolute highest superchat earners; gone are the days when Coco and Rushia dominated the board for years, even though Marine and Pekora are now on par with the former two holomembers (and that's after hololive's progressive push away from superchat revenue). Even then, people should realize that YouTube is taking a significant cut from those superchats, which is why talents like Suisei have shifted to merch promotion.

You remember a few years back, back when the Epic Game Store debuted and how they were better than Steam because Epic took a lesser "cut" of games' purchase price than Valve did?
Same basic principle here, Alphabet (aka Google, aka You Tube) takes a cut of all superchats handled via them. This is nothing new in fact, as even third party services do this kind of thing. Twitch also does something similar with Bits, but to my understanding that's factored into the purchase price.
(It gets worse if you're doing this from a mobile device, as then Apple and Google want their cut, too; it's why Bit prices are higher on mobile, as Twitch is also factoring that into the price.)
However, merch of various kinds doesn't have that issue. The profit goes purely to Cover, who splits it between themselves and the talent based on whatever agreement is in play.
(And yes, this also applies to other vtubers, both corporate and indie; heck, it applies to streamers and content creators in general.)

It could just be that TTT never got an official name, and whoever wrote it didn't think they should use an unofficial one. Vivi and Claude being ready to go is very possible though
