Dad got some salted macadamia nuts for Father's Day yesterday (it's a different day here - September 5 - than in other countries) and decided to share, which made me remember how I sometimes like to use nuts when I bake, so I'm looking to get some unsalted ones and some white chocolate chips to make, well, white choc chip and macadamia cookies.

Tonight's dinner will be chicken and loaded potato skins! I was just in the mood for a baked potato, I guess, and I had some cheese I wanted to use up.
I find baked potatoes to be a very fall-like food. I guess they can be summery as well, if you eat it at a BBQ, but I jus associate them with fall. Probably because it's like harvest season or something.
EDIT: Oh, God, I put just a dab of mango-habanero hot sauce on the chicken, and my whole fucking mouth is on fire! I bought it because I like spicy food and the bottle was cool, I'll have to try with other foods, as well.
Doesn't taste enough of mango, though. I mean, if you make mango-habanero stuff, you expect to taste the mango, right?
I also found a bottle of gingerbread-flavored cider I bought quite a while ago. Despite how disgusting it sounds, it's actually pretty good.

I had no idea getting a hold of tapioca starch was so difficult around here... and nor did I know there were both white and black chia seeds.
Nevertheless, any color of chia seed is a good substitute for xantham gum, which is also hard to get a hold of here. It's just that you have to grind a lot of them - I read that substituting 1 1/2 teaspoons of xantham gum with 6 tablespoons of chia seeds would work. I also swapped the tapioca with corn starch, but not as much - Since corn starch absorbs more liquid, the recommendation said to halve the amount of corn starch.
Somehow, it all worked out in the end. They were tasty, even if they were grey.

A while ago I managed to cook a lamb shank properly (my first attempt gave good meat but the rest of it was less than acceptable). This time around, I used way less onion and balsamic vinegar than my first attempt, and made up the difference with beef stock. I also chopped up an entire unripe mango and threw that in; the long cook broke it down into tender chunks, and the sweetness cut through the acidity of the wind and the onioniness of the onions.
For the last few days we've been having unautumnly weather, and I was able to get one last barbecue in. Striploin steak, with just a little salt and some BBQ sauce. Cooked to perfection, and so funting good!
I also made a blackberry pie with berries I picked myself. Not much to look at, but my housemates appreciated it. I intended to chop up a honeycomb and put that on top of the berries, but it was only after it was in the oven I realised I'd forgotten. Still delicious because it's fresh blackberries.
For yesterday's dessert, since the whole dinner was Japan-themed, I wanted to make a cake with Japanese-inspired flavors, as well.
Base: A sweet potato cake. Gluten-free by way of replacing the flour with a corn-based flour substitute.
Filling: Custard flavored with black sesame seeds and a touch of orange. (Because I wanted some citrus flavor for the sake of balancing the sweetness a bit)
Decorations: Cream and black sesame/pumpkin seed brittle. I didn't whip the cream enough, so the decoration became a tad sloppier than I wanted, but that's just a lesson for next time.
End result: Everyone who ate it thought it was delicious and mentioned that they'd never eaten anything like it before.

Minced meat fried together with leek and red onions, in bacon-fat, while I shredded the zucchinis and squeezed most of the water out of them. Then I stewed everything together, spiced it well with pepper, paprika and plenty of oregano.
Now that it’s apple season, I’m planning on making some pies with my father. The problem is, I don’t know which apples remain firm after cooking.
Aside from that, I looked up some videos on homemade burgers and found a Gordon Ramsey’s YouTube channel. He used an egg yolk and a jalapeño pepper to hold it together. I don’t know why only yolk but I made a double batch with an entire egg and two jalapeños while replacing the salt with Worcestershire sauce to give it a kick. They turned out great.
Whoever came up with the chocolate croissants they have at Trader Joe’s is a genius. ![]()
Gonna make me a big ol' batch of brownies bc I have had an absolute shit day today (topped off by the arrival of the scarlet menace) and I need something extra chocolatey.

I think I’m finished with boiling. From this day forward, I’m cooking all of my corn on the cob in the oven.
