Here are the dinner and dessert I cooked up to commemorate the completion of the Jamaica chapter of my new book. The dinner itself turned out excellently. cool The dessert, well, it probably wasn't my best batch (it didn't look anything like the picture surprised :S), but believe me, it tastes better than it looks. :)

Not pictured: The movie I watched to go with it, Cool Runnings.

My latest sourdough loafs are in the oven. They smell wonderful.

I’m happy they proofed properly this time - I had a period of tile there the proofing just wouldn’t work properly.

There’s a tiny grocery store in a neighbouring village that sells these pecan-maple pastries that are amazing.

Puff pastry filled with custard, drizzled with maple syrup and topped with pecans and a hint of powdered sugar. Is it sweet? Hell yes, but so good! They go really well with coffee.

Perhaps I should try to make them myself and see if I can match the ones they sell.

Welp, no dice on the sassafras. Good thing extra okra does pretty much the same thing (thickener), minus the flavour note.

I also made biscuits (from Chef John's recipe, no less) to go with it.

I tried to make potato chips again today. I discovered when I was about to start to make them that I didn't have mealy potatoes at home - Just firm ones. I couldn't be arsed to go to he store to buy some, though, so I pressed on with the firm potatoes following the Kenji Lopez kettle chip method. (Slice, rinse in water until it runs clear, boil in vinegar-laced water for 4 minutes, dry off, fry in 160C oil until done)

It turned out surprisingly well. I was worried about the texture, but they turned out very crunchy. I flavored them with some spice mixes I bought a while back: Cream cheese and sour cream-tahini.

I'll be making Donair this week (an Eastern Canada variant of gyros with a to die for sauce made with condensed milk, garlic and vinegar).

Ya girl gonna make some banana bread tomorrow~ I commented on the banana bread at Boost Juice yesterday (and how mine was better [lol]) and was gonna make it today buuut I ended up not feeling up to it. Too tired for some reason.

I just got a recipe book called the No-Recipe Recipe Book. Silly name aside, it's really good for learning how to throw meals together without following rigid instructions (a skill that I want to learn). I'm planning on making beef curry with it this week!

I had homemade French bread pizza for dinner. I never made my own before; it turned out quite excellently for a first try. :) [tup]

Does anyone know a good recipe that utilizes egg whites? I want to make creme brule but I don't want the whites to go to waste.

[up] Meringue, my man! Swiss and French meringue use different techniques to achieve different textures: With Swiss, you just beat the egg whites and sugar together as expected, but French meringue is first whipped over a bain-marie until the sugar has dissolved and then whipped until cool.

You can also make souffle or flourless chocolate cake.

Chocolate mousse is also a great way to use egg whites.

Tbh I never really hated his minigames in the original, but they did make them better in the remake.

Besides desserts, I'd recommend Finnish macaroni casserole as a good way to use up eggs. When macaroni and minced meat is put in the oven, you need to pour together with them a mixture of scrambled eggs in milk.

Oooooh, macarons are also a good way of using egg whites if you have ground almonds and powdered sugar. They're a bit tricky to make, but even if you fail, they're delicious!

Not sure what to make first for dinner this week; sweet potato chickpea Thai style curry with peanut orange ginger sauce or donair meatball pitas. note 

I'll be alternating the leftovers throughout the week.
