I think it's too early to declare the genre dead. MGSV came out toward the end of 2015; it hasn't even been five years.
Genres cycle in and out of popularity. Stealth games got big mostly because Metal Gear Solid was such a huge hit and everyone else wanted to cash in on it. But fresh new things later come along to entice people away, and today those are open-world games and battle royales (and also first-person shooters).
Ukrainian Red CrossDishonored's still a thing. Also, I think some games have been Genre Buster to a degree that we're not seeing specific stealth games anymore.
Can't think of too many at the moment but how many games in the past 5 years have you seen that had some element of stealth baked into them? Amnesia, Outlast, FNAF, Last of Us, Death Stranding, etc.
We're losing "stealth" as a genre in favor of "action games with stealth elements tossed in."

Also A Plague Tale: Innocence was a stealth game and came out last year. Dishonored Death of the Outsider was 2017, Prey was the same year.
